For Tasty Table Catering, a catering company rooted in fresh, locally sourced ingredients and serving the Philadelphia and Main Line area, it was the perfect setting to do what we do best: create extraordinary food that honors its origins.

Wyebrook Farm is located in Honey Brook, Pennsylvania, in the heart of Chester County farm country. Founded by Scott and Jeff—neighbors, brothers-in-law, and advocates for a better food system—the farm grew out of their desire to bring sustainable, local meat production closer to home after selling a family cattle farm in Central Pennsylvania.
Inspired in part by the strain on the food supply during COVID, they saw an opportunity to invest in a more resilient, community-focused model. Since acquiring the property in late 2020, they’ve been restoring its pastures and raising cattle and pigs on land already well-suited for pasture-based farming. Their mission is simple: provide clean, responsibly raised meat to their community.

The Star of the Menu: Wyebrook Farm Ossobuco
When planning our menu for the Wyebrook banquet, the decision to feature pasture-raised ossobuco from Wyebrook Farm's own herd was an easy one. Ossobuco — the braised cross-cut veal or beef shank, slow-cooked until the meat yields from the bone and the marrow melts into the sauce — is a dish that demands exceptional quality at the source. It is not a cut that forgives shortcuts.
Wyebrook's cattle are raised on open pasture in Chester County, managed with the care and transparency that is central to the farm's identity. The result is beef with depth of flavor that grain-fed, feedlot-raised animals simply cannot replicate. Slow-braised farm-to-table ossobuco like this is the kind of dish guests talk about long after the event is over.
Our team prepared the shank low and slow, building a braise with aromatics and a rich, reduced sauce — letting the natural flavor of the pastured beef carry the dish rather than masking it. Served at a banquet table on the Wyebrook property, surrounded by the fields where those animals were raised, the effect was profound.
