Pan roasted duck breast; mushroom farro, gingered carrots, sweet & sour duck jus, blistered shishito peppers
Olive oil poached monkfish; Castle Valley Mills polenta, broccoli rabe, lemon caper sauce, shaved fennel

Pan roasted Hudson valley steelhead trout; bacon & leek rye-sotto, caramelized Brussels sprouts, cara cara orange vinaigrette, smoked trout roe

Roasted rack of lamb; winter squash purée, roasted parsnips, broccoli rabe, minted lamb jus
