The Closing Table: How We Turned SBA Jargon Into a Menu and Why Your Industry Should Do the Same
Published by Tasty Table Catering | The Table: Kitchen + Market | 10 Leopard Road, Berwyn, PA
Most corporate happy hours on the Main Line are interchangeable. A tray of shrimp cocktail. A cheese board that could have been assembled for a retirement party, a real estate open house, or a pharmaceutical sales dinner. The food is fine. Nobody remembers it, because nothing about it was built for the people in the room.
This past June, we hosted The Closing Table — a private networking happy hour at The Table: Kitchen + Market in Berwyn, PA, built specifically for SBA lenders, business brokers, transaction attorneys, CPAs, and deal advisors working across the Main Line and greater Philadelphia.
The event had sponsors Liz Proud of Greenbriar Capital and Matthew Barrett of Aprio, both active in this market every day.
Every item on the menu was named in the language of SBA lending.
That was the whole idea. It worked better than we expected and it is the single most repeatable thing we can offer any company looking to host a corporate event on the Main Line.
The Problem With Networking Food
A room full of professionals who have never met faces one structural obstacle: nobody knows how to start.
The standard solutions are weak. Name tags announce information nobody asked for. Forced introductions feel like a seminar. An open bar helps, but only after forty-five minutes, and only for some people.
Food solves this — but only if the food is about something. A dish with a name that requires industry knowledge to decode does three things at once:
It signals that the host understands the guests.
It gives strangers a shared object to react to.
It generates conversation without a facilitator.
We watched it happen. Two lenders who had never met stood in front of a tray labeled "Equity Injection" Skewers and were talking about deal structure inside of thirty seconds. The sign did the work.
The Menu: SBA Terms, Scratch-Cooked
Every name is an SBA or M&A term. Every dish was prepared from scratch in our kitchen.
On the Card On the Plate
"Clear to Close" Tequila Cocktail Signature cocktail — 1800 Blanco, fresh citrus
"Equity Injection" Skewers Grilled chicken skewers, served hot
"Cash Flow" Sliders Sliders off the chafing line
Philly "Funded" Cheesesteak Egg Rolls Cheesesteak egg rolls with dipping sauce — a local obligation
"Term Sheet" Tacos Grilled chicken, shredded carrot slaw, cilantro, soft flour tortilla
Charcu-"Committee Board" Aged and soft cheeses, capicola, salami, berries, crackers, honey, roasted peppers
The "Financial" Spread House hummus, crudité, pita chips, herbed crostini
"Good Will" Guac Guacamole and pico de gallo, warm tortilla chips
Full bar alongside: red and white wine, domestic and imported beer, sparkling water, and soft drinks.
The signage was deliberately plain — small white cards, black type, no logos. The joke lands harder when the presentation is straight-faced.
The Program Was Almost Nothing
No panel. No slides. No breakout rooms.
Guests arrived, ate, and talked. Partway through, each sponsor took the floor for a few minutes long enough to say who they are and what they do, short enough that nobody set down a drink.
Then back to the room.
This is worth stating plainly, because it is the most common mistake we see in corporate event planning on the Main Line: hosts over-program. A networking event exists so that people can talk to each other. Every minute of scheduled content is a minute they cannot. Two sponsor remarks inside a two-hour reception is close to the correct ratio.
Design Is Not Decoration
The dining room at The Table was set as a single long harvest table running the length of the wall, with the hot line staged separately on a console under the windows and the bar in its own corner.
This is not an aesthetic preference. It is traffic engineering.
A single buffet creates a single line, and a single line creates a bottleneck that ends conversation. Splitting service into three stations — cold table, hot line, bar — pulls guests into a circuit. People move. People cross paths more than once. The room stays in motion for the full event.
Candles on the table. Warm sconce lighting. Real plates and real serving pieces, not disposables. Guests were still standing and talking well past the scheduled end.
The Transferable Idea: Your Industry's Vocabulary Is a Menu
The Closing Table was built for SBA professionals. The method has nothing to do with SBA lending.
The Closing Table was built for SBA professionals. The method has nothing to do with SBA lending.
Every industry has a private vocabulary the acronyms, the jargon, the terms of art that outsiders don't parse. That vocabulary is a menu waiting to be written.
Commercial real estate: "Triple Net" Nachos. "Cap Rate" Crab Cakes.
Litigation: "Discovery" Boards. "Billable Hour" Bourbon.
Healthcare administration: "Prior Auth" Pretzel Bites.
Construction and engineering: "Change Order" Charcuterie. "Punch List" Passed Bites.
Software and SaaS: "Churn" Churros. "Series A" Sliders.
Tell us what your people say to each other all day. We will build the menu, print the cards, and cook the food.
